G’day Group, a leading Australian tourism company, is seeking an experienced Sous Chef to join the Discovery Resorts – Kings Canyon kitchen. You will support the Head Chef in daily operations, mentor the team and uphold high culinary standards across à la carte, buffet and special dining experiences.

This role offers a chance to develop leadership skills in a unique outback setting while ensuring HACCP compliance, cost control and exceptional guest experiences for visitors from around Australia.

Qualifications

• Proven experience as a Sous Chef or strong senior chef leadership experience.
• Trade qualifications in commercial cookery.
• Solid menu planning and cost control knowledge.
• Commitment to food safety and hygiene standards.
• Ability to lead and develop a kitchen team.
• Desire to work in a fast-paced, guest-focused environment.

Responsibilities

• Support the Head Chef with day-to-day kitchen operations, rostering and ordering
• Lead, train and mentor kitchen staff
• Prepare and present high-quality dishes with consistency and attention to detail
• Maintain HACCP and food safety compliance
• Manage stock control, waste and cost efficiency
• Work closely with front-of-house teams to ensure smooth service
