Checho’s Sydney is seeking an experienced Operations Manager to oversee multiple venues across Penrith, Camden, Castle Hill, Cronulla and Wollongong. You’ll lead venue managers, ensure consistent service, brand standards and profitability while hands-on in busy service periods.

With expansion planned, you’ll play a key role in new openings, recruitment, training and establishing strong operating systems from day one, building a high-performing team culture across the group.

Checho’s is Sydney’s fast-growing Mexican bar and restaurant brand, famous for bold food, creative cocktails and an unforgettable atmosphere.

What started in Penrith has grown rapidly, with venues now operating across Penrith, Camden, Castle Hill, Cronulla and Wollongong and multiple new locations across Sydney opening before the end of the year.

With continued expansion ahead, we’re looking for an experienced Operations Manager to help lead our venues, develop our management teams and drive the next stage of Checho’s growth.

About the Role

We’re looking for a hands‑on, passionate and experienced Operations Manager to oversee multiple Checho’s locations across Sydney.

You’ll work closely with our Venue Managers to ensure every location delivers the same high standard of food, drinks, service and atmosphere.

This isn’t a desk job. We’re looking for someone who is present in the venues, leads from the front and knows how to build strong teams and successful restaurants.

With multiple new Checho’s locations opening before the end of the year, you’ll also play a major role in new venue openings, recruitment, training and establishing strong operational systems from day one.

Key Responsibilities

• Oversee day-to-day operations across multiple Checho’s venues.
• Lead, support and hold Venue Managers accountable for performance.
• Maintain consistent service, presentation and brand standards across every location.
• Recruit, train and develop strong management, floor and bar teams.
• Be hands‑on in venues and lead from the front during busy services when required.
• Monitor labour, rostering, stock control, ordering and operational costs.
• Drive sales, profitability and overall venue performance.
• Support the opening and launch of multiple new Checho’s locations.
• Plan and execute events, functions and brand activations.
• Build a strong team culture focused on performance, accountability and retention.
• Identify operational issues quickly and implement solutions across the group.

About You

• Proven experience as an Operations Manager, Area Manager, Multi‑Site Manager or experienced Venue Manager within hospitality.
• Strong experience managing high-volume restaurants and bars.
• Excellent bar knowledge and understanding of cocktail operations.
• Strong leadership skills with the ability to manage and develop Venue Managers and their teams.
• Strong commercial understanding of labour, stock control and venue profitability.
• Excellent communication, organisation and problem‑solving skills.
• RSA certification required.
• Hands‑on, proactive and comfortable working in fast‑paced, high‑energy venues.
• Able to travel between Checho’s locations across Sydney as required.
