Job summary

KB Seafood Co in Melbourne is seeking a Product Development professional to manage new product development from concept through to launch. Responsibilities

• Manage new product development projects from initial concept through to commercial launch.
• Coordinate production trials, product evaluations, and initial manufacturing runs.
• Partner with QA and regulatory teams to ensure product specifications, HACCP requirements, labelling, and compliance documentation are completed.
• Support troubleshooting during trials and production launches.
• Develop and maintain product specifications, BOMs, ERP records, and NPD project tracking.
• Support packaging and labelling development, ensuring compliance, sustainability, and cost objectives are achieved.
• Monitor product performance and identify opportunities for improvement and innovation.
• Prepare trial reports and communicate outcomes to key stakeholders.

About the Role

Working closely with Production, Quality, Procurement, Sales, and Commercial teams, you will manage new product development projects from concept through to launch. You will support trials, product optimisation, packaging development, and compliance activities to ensure products meet customer expectations and regulatory requirements.

• Manage new product development projects from initial concept through to commercial launch.
• Coordinate production trials, product evaluations, and initial manufacturing runs.
• Partner with QA and regulatory teams to ensure product specifications, HACCP requirements, labelling, and compliance documentation are completed.
• Support troubleshooting during trials and production launches.
• Develop and maintain product specifications, BOMs, ERP records, and NPD project tracking.
• Support packaging and labelling development, ensuring compliance, sustainability, and cost objectives are achieved.
• Monitor product performance and identify opportunities for improvement and innovation.
• Prepare trial reports and communicate outcomes to key stakeholders.

You will have:

• Experience in product development, ideally within food manufacturing.
• A degree in Food Science, Food Technology, Nutrition, or a related discipline.
• HACCP certification.
• Experience managing projects in a fast-paced manufacturing environment.
• Strong knowledge of food safety, quality systems, and Australian food regulations.
• Excellent communication, organisation, and problem-solving skills.
• Understanding of sustainability frameworks such as MSC, ASC, BAP, GGAP, APCO, Sedex, or SMETA.
