Bob's Bakery on Hamilton Island is seeking an experienced Baker to join the night shift, producing yeast breads, sourdough and laminated pastries from scratch. You’ll contribute to daily trade, maintain quality and food safety, and work within a busy island bakery environment.

Night shifts start around 4pm and run until between midnight and 3am. A Certificate III in Bakery and a valid driver’s licence are essential, with staff accommodation and island discounts available.

Qualifikationen

• Certificate III in Bakery or equivalent trade qualification.
• Proven experience producing yeast-risen breads and sourdough from scratch.
• Experience making croissants and danishes from scratch.
• Strong understanding of dough preparation, fermentation and bakery production.
• Must be available to work night shifts starting ~4pm and finishing 12am–3am.
• Valid Driver's Licence.

• Work across nightly bakery production, preparing and baking breads and pastries for the next day.
• Handle doughs from scratch, including sourdough and laminated pastries like croissants and danishes.
• Manage time to meet production schedules while maintaining quality, presentation and food safety.
