Qualifications

• Min 2 years as Restaurant Manager in high‑end or à la carte setting.
• RSA certificate and NSW competency card.
• Strong understanding of food and beverage operations.
• Love for great food and wine.
• WSET level 2 or CMS certification desirable.
• Demonstrated financial acumen in profitable restaurant operations.
• Knowledge of back‑of‑house operations including stock takes, COGS and rostering.
• Ability to lead and develop a team and deliver outstanding customer service.

Responsibilities

• Deliver an exceptional and personalised dining experience from guest arrival to departure.
• Oversee daily restaurant operations with smooth service and quality delivery.
• Build relationships with guests, local businesses and the community to drive loyalty.
• Lead, motivate and develop a high‑performing team with a culture of excellence.
• Recruit, onboard, train, coach and provide regular performance feedback.
• Ensure compliance with health, safety, liquor licensing and company standards.
• Manage labour costs, rostering, inventory, stock ordering and wastage.
