Job summary

Hamilton Island Enterprises’ Catseye Pool Club in Sydney CBD seeks an experienced Sous Chef to join the kitchen leadership, overseeing daily service in a high-end seafood‑focused environment and upholding the restaurant’s sustainability standards.

Reporting to the Head Chef, you’ll mentor the brigade, manage sections, assist with rostering and stock control, and contribute to menu refinement and daily specials while maintaining quality under pressure.

Qualifications

• Certificate III in Commercial Cookery is essential.
• Current Food Safety Supervisor Certificate is essential.
• Current First Aid & CPR Certificate is essential.
• Minimum 3–5 years' experience at Senior CDP or Sous Chef level.
• Experience in high-end, seafood-focused kitchens preferred; strong leadership skills.
• Open Australian Driver Licence preferred and working rights.

Responsibilities

• Lead hands-on kitchen leadership across daily operations.
• Oversee sections, mentor junior chefs and train the brigade.
• Support rostering and stock control, contribute to menu refinement.
• Deliver daily specials while upholding seafood philosophy and sustainability.
