Job summary

Hamilton Island is seeking a Demi Chef to join the Catseye Pool Club kitchen, a seafood-focused venue led by Josh and Julie Niland. You’ll support daily kitchen operations, work across stations, and help deliver innovative, sustainable seafood dishes in a premium setting.

You’ll refine your skills, learn from industry leaders, and contribute to outstanding dining experiences while enjoying island living and staff perks.

Qualifications

• Certificate III in Commercial Cookery (Essential)
• 1–2 years of experience in a commercial kitchen
• Passion for seafood and zero-waste cooking methods
• Strong work ethic, willingness to learn, and a collaborative attitude
• Ability to work varied shifts including mornings, evenings, weekends, and event service
• Valid working rights in Australia
• Manual open driver’s licence (preferred)

Responsibilities

• Prepare and cook seafood and supporting dishes under guidance from senior chefs
• Uphold high standards in food quality, presentation, and sustainability
• Work across kitchen stations including grill, cold larder, and fish prep
• Maintain food hygiene, storage, and safety protocols at all times
• Contribute to prep for daily service and special event menus
• Participate in team meetings, briefings, and kitchen handovers
