The Guildford Hotel is seeking a hands-on Sous Chef to join our team. You’ll support the Head Chef, lead the kitchen during busy services and take ownership of day-to-day running.

You should have experience in large-scale, high-volume venues, strong kitchen management skills, and a practical, hands-on leadership style. The role offers competitive pay, opportunities at Australian Venue Co., and a path to development within a supportive hospitality group.

Qualifications

• Prev experience as Sous Chef, Kitchen Manager or similar senior kitchen role.
• Experience in larger-scale, high-volume venues (pub/hotel/multi-outlet).
• Strong kitchen management with knowledge of food costs, labour, ordering, stocktake, wastage.
• Organised, commercially minded, confident in decision-making.
• Hands-on leader who leads by example and steps in when needed.

Responsabilités

• Support the Head Chef with daily kitchen operations and management.
• Lead, coach and develop the kitchen team to foster a positive, accountable culture.
• Keep service running smoothly during busy periods while maintaining food quality and consistency.
• Manage food costs, labour, stock control, ordering and waste.
• Maintain food safety, hygiene standards and kitchen procedures.
• Assist with menu execution, preparation planning and maintaining standards.
• Help manage rosters, delegate tasks and ensure kitchen is organised for service.
• Take ownership of the kitchen when the Head Chef is away.
