Job summary

Pegasus Leisure Group in Bacchus Marsh is seeking an experienced Full Time Sous Chef to join Stoney's Club. You will work with the Head Chef to keep the kitchen running smoothly, lead the team, and deliver high-quality dishes in a fast-paced environment.

This role focuses on maintaining safety standards, managing stock and costs, and supporting recruitment and training to build a capable kitchen team in a dynamic hospitality setting.

Qualifications

• At least 3 years' experience in a professional kitchen, with leadership in busy service.
• Certificate III in Commercial Cookery or equivalent qualification.
• Current Food Safety and Food Allergen certificates or willingness to obtain.
• Strong knowledge of food safety, hygiene and kitchen compliance.
• Ability to lead and develop a kitchen team.

Responsibilities

• Work with Head Chef to keep the kitchen running smoothly and service on point.
• Prepare and plate quality dishes that look great and delight guests.
• Lead and motivate the kitchen team to foster a positive kitchen culture.
• Maintain the highest food safety, cleanliness and kitchen standards.
• Help manage stock, ordering and supplier relationships to minimise waste.
• Monitor food and labour costs and contribute to budget targets.
• Support recruitment, training and development of team members.
