Job summary

Brickfield Hospitality Group in Sydney CBD is seeking a capable and motivated chef to lead our kitchen at Three Wise Monkeys, one of Sydney's best-known venues.

This hands-on Head Chef role is ideal for an experienced Sous or Junior Sous Chef stepping up. You’ll run a small kitchen, manage the team and work with venue management to deliver consistent, high-quality pub food across lunch, dinner and entertainment periods.

Qualifications

• Experience as a Sous Chef, Junior Sous Chef or Head Chef in a pub or similar environment.
• Hands-on leadership style with strong organisation, communication and time-management skills.
• Knowledge of food costs, stock control, rostering and waste management.
• Food Safety Supervisor certificate, or willingness to obtain one.

Responsibilities

• Lead and support a small kitchen team.
• Oversee daily preparation, service and kitchen operations.
• Delivering consistent food quality, presentation and service times.
• Planning for changing trade across lunches, evenings, weekends and entertainment periods.
• Managing ordering, stock levels, food costs and waste.
• Preparing rosters and maintaining appropriate staffing levels.
• Upholding food safety, hygiene and WHS requirements.
• Supporting recruitment, training and performance within the kitchen.
• Working closely with venue management on promotions, functions and key trading periods.
