Job summary

Brickfield Hospitality Group's Royal Albert Hotel in Sydney is seeking a motivated Head Chef to lead a tight-knit kitchen team in a pub setting. This hands‑on role suits an experienced Sous/Jr Sous Chef stepping into a Head Chef position or an established Head Chef preferring an intimate operation.

You'll own day-to-day kitchen leadership, drive food quality and safety, and partner with venue management to deliver an exceptional guest experience.

Qualifications

• Experience as Sous Chef, Junior Sous Chef or Head Chef within pub/hotel/restaurant environment.
• Strong leadership and team management capabilities.
• Hands-on approach with ability to lead from the front.
• Good communication and rostering skills.
• Willingness to obtain Food Safety Supervisor certificate if not held.

Responsibilities

• Lead, train and motivate a small, close-knit kitchen team.
• Oversee daily preparation, service and kitchen operations.
• Maintain consistency, quality and presentation across all menu items.
• Manage ordering, stock control, food costs and waste.
• Maintain food safety, hygiene and WHS standards.
• Coordinate kitchen rostering and support recruitment and performance management.
• Collaborate with venue management to ensure smooth service.
• Identify opportunities to improve kitchen systems and menu performance.
