Qualifications

• Certificate IV or Diploma in Hospitality or equivalent.
• Minimum 1 year of commercial cooking experience; supervising kitchen staff.
• Strong communication, leadership and organisational skills; sound knowledge of food safety.

Responsibilities

• Plan and direct food preparation for lunch and dinner.
• Develop menus, specials and kids' menus to meet quality standards.
• Estimate food requirements and labour costs; manage stock.
• Prepare and cook to a consistent standard across service periods.
• Lead kitchen staff; rostering, orders and stock control.
• Maintain the food safety program and documentation.
• Ensure compliance with hygiene and safety requirements.
• Coordinate with bar/front-of-house during events.
