Vito's, a soon-to-be-open New York–Italian restaurant in Sydney, is seeking a Late Night Pizzaiolo to own the pizza section during service, ensuring every pie reflects our standards and style.

Join a collaborative kitchen, work primarily in the evening and late-night shifts, and help maintain dough quality, bake pizzas to a high standard, manage ovens safely, and support stock control while keeping a clean, food-safe workstation.

Qualifications

• Strong knowledge of dough handling and fermentation, preferably New York style.
• Ability to work efficiently under pressure during late-night service.
• High attention to detail and pride in consistency.

Responsibilities

• Prepare, stretch, and cook pizzas to a high standard with consistency and speed
• Manage the pizza section independently during late-night service
• Maintain dough quality, fermentation, and portioning standards
• Operate and manage pizza ovens safely and efficiently
• Ensure all prep for service is completed to standard before service begins
• Maintain a clean, organised, and food-safe workstation at all times
• Work collaboratively with the kitchen team to ensure smooth service flow
• Assist with stock control and minimise waste
