Job summary

The Dongara Hotel Motel seeks an experienced hospitality leader to oversee the day‑to‑day operations across the hotel’s bar, restaurant, bottleshop, TAB and motel on WA’s Coral Coast. You will work closely with ownership to uphold standards, control costs and drive profitability, while hands‑on on the floor with staff and guests.

Ideal candidate has solid licensed hospitality experience (Hotel/ Venue/ Pub Manager or senior supervisor) and current RSA training; WA Approved Manager status is

• Current RSA training and WA Approved Manager status preferred or willingness to obtain.

Job description

You will have genuine responsibility for the day-to-day operation of the hotel and will work closely with ownership to keep standards high, control costs and improve the way the business operates. This is a hands‑on hospitality management role where you will be involved in the operation — on the floor, working with staff, dealing with problems as they happen and making sure the venue is running properly.

Key responsibilities

Running the daily operation across the bar, restaurant/café, bottleshop, TAB and motel

Leading the team from the front and assisting on the floor when required

Preparing rosters and keeping labour costs under control

Recruiting, onboarding, training and supervising staff

Managing staff performance and addressing problems when standards are not being met

Maintaining strong customer service and presentation standards

Handling customer complaints and service recovery

Managing difficult or intoxicated patrons, refusals of service, incidents and patron bans

Ensuring RSA, liquor licensing and other day‑to‑day compliance requirements are followed

Managing tills, cash handling, stock ordering, stocktakes, wastage and stock variance

About you

Solid experience in licensed hospitality as a Hotel Manager, Venue Manager, Pub Manager, Operations Manager, or strong Assistant Manager or Duty Manager ready to step up

Strong staff leadership and supervisory skills

Experience with rostering and labour control

Experience with stock ordering, stocktakes and stock control

Good cash-handling and till-control experience

Confidence dealing with difficult or intoxicated patrons

The ability to manage staff performance fairly and directly

A good understanding of how labour, stock, wastage and gross margin affect profitability

Current RSA training meeting WA requirements

Current WA Unrestricted Approved Manager approval strongly preferred, or eligibility and willingness to obtain it before independently acting as the venue's Approved Manager

The Dongara Hotel Motel is located on WA's Coral Coast and has been part of the local community since 1867. We are an independently owned hotel with a busy bar, restaurant and café, alfresco area, bottleshop, TAB and 28-room motel. Ownership will remain actively involved in the business and will continue to handle bookkeeping and accounting, tax and formal financial reporting, business financing, major capital expenditure, major contracts, and broader business strategy and major financial decisions.
