Job summary

Novotel Sydney Darling Square is seeking a Purchasing Manager to lead day-to-day procurement for the hotel. Reporting to the Financial Controller, you will work with Culinary, Housekeeping, Front Office and other departments to source and manage food, beverage, and general supplies.

You will monitor stock levels, build strong supplier relationships, negotiate pricing and terms, and identify cost-saving opportunities without compromising quality in a fast-paced hotel environment.

Qualifications

• Previous experience within a hotel or hospitality environment.
• Strong negotiation and supplier relationship management skills.
• Excellent organisational and time-management skills.
• Strong attention to detail and accuracy.
• Good understanding of inventory and stock control.
• Ability to work independently while being a collaborative hotel team member.
• Practical, solutions-focused approach in a fast-paced setting.

Responsibilities

• Work with Culinary, Housekeeping, Front Office and other departments to understand and deliver purchasing needs.
• Source and purchase food, beverage, operational and general hotel supplies.
• Monitor stock levels, inventory movements and purchasing requirements to ensure continuous supply.
• Build and maintain strong relationships with suppliers and negotiate pricing and terms.
• Identify opportunities to reduce costs, improve efficiencies and maximise value without compromising quality.
