Job summary

Brae is seeking an experienced Head Sommelier for a full-time fixed-term maternity leave through May 2027. You will lead the beverage program across the restaurant and guest suites, shaping wine and drink lists, purchasing and supplier relationships, cellar management and budgeting.

You will be on the floor, sharing knowledge, training the FOH team and contributing to a hospitality culture that emphasizes place, people and character within a small team.

Qualifications

• Minimum 3 years’ professional sommelier experience.
• Knowledge of Victorian producers and Australian wine.
• Experience with purchasing, stock control and beverage costing.
• WSET 3/Advanced or CMS certification; RSO and Do Food Safely certificates.

Responsibilities

• Lead Brae’s wine and beverage program.
• Develop and maintain wine and beverage lists.
• Manage purchasing, allocations and supplier relationships.
• Oversee stock control, beverage costs and sales performance.
• Deliver confident, knowledgeable beverage service on the floor.
• Develop pairings to enhance guest experience.
• Mentor FOH team in wine, spirits, cocktails and non-alcoholic beverages.
