Job summary

The Drouin Family Hotel in Drouin, VIC, is seeking an enthusiastic and passionate Head Chef to lead our 300-seat family-friendly Bistro. You will oversee all kitchen operations, drive menu development, manage budgets and maintain high standards across the kitchen.

Qualifications

• The candidate must be passionate about food and lead by example with drive, enthusiasm and attention to detail.
• Strong leadership, communication and interpersonal skills to motivate and develop staff.
• Ability to work under pressure and maintain high kitchen standards.
• Experience in menu development, costing, stock control and purchasing.

Responsibilities

• Oversee all facets of kitchen operations and lead the team.
• Maintain budgets and ensure high standards of meals and service.
• Develop and maintain cost control for product and labour.
• Ensure HACCP and OHS compliance and food safety procedures.
• Build relationships with regulatory authorities as required.
