Job summary

Thurgoona Country Club Resort is seeking an experienced Head Chef to lead a dynamic kitchen team across club dining and large-scale events. You will deliver exceptional food, design menus, manage costs and ensure quality across weddings, conferences and functions.

The role requires proven leadership, strong organisational skills and a passion for delivering outstanding dining experiences in a busy hospitality environment.

Qualifications

• Proven experience as a Head Chef or sous chef in club, hotel, restaurant or function venue.
• Strong experience in functions, banquets, weddings and high-volume food production.
• Demonstrated leadership skills to inspire and manage a diverse kitchen team.
• Excellent menu planning, food costing and stock management skills.
• Ability to work under pressure and manage multiple events and service periods.
• Strong communication, planning and problem-solving skills.
• Commitment to quality, consistency, teamwork and customer satisfaction.
• Relevant culinary qualifications and food safety knowledge.

Responsibilities

• Lead, mentor and develop the kitchen brigade to deliver consistent, high-quality food.
• Oversee all kitchen operations, including club dining, weddings, conferences, banquets and special events.
• Design and develop appealing menus, function packages, buffets and seasonal specials.
• Manage food costs, budgets, stock control, purchasing and supplier relationships.
• Plan kitchen staffing and rosters to meet daily service and function requirements.
• Ensure food quality, presentation, portion control and service standards are consistently maintained.
• Maintain compliance with food safety, hygiene and workplace health and safety requirements.
• Minimise food waste and maximise kitchen efficiency and profitability.
• Work closely with club management, event coordinators and front-of-house teams to ensure successful functions and memorable guest experiences.
