Job summary
Delaware North Australia seeks a full-time Head Chef with Asian specialty experience to lead the Mindil Beach Casino Resort kitchen in Darwin. You will drive authentic Asian flavours, modern techniques, and high-volume service in a premium dining environment.
The role focuses on menu development, quality control, cost management, team leadership, and HACCP compliance. Previous experience with Chinese, Korean, Japanese, and Malaysian cuisines in large-scale venues is preferred; visa sponsorship
Qualifications
- Proven leadership of large kitchen operations in high-volume Asian cuisines.
- Experience in premium dining or large-scale events.
- Strong menu development and cost management skills.
- Knowledge of HACCP and food safety standards.
Responsibilities
- Design and evolve menus showcasing authentic Asian flavours with modern techniques.
- Provide hands-on leadership, mentoring and training for a high-performing kitchen team.
- Maintain exceptional food quality and presentation through robust systems and processes.
- Monitor food costs, budgets and operational efficiency to support profitability.
- Oversee labour planning and performance management for all team members.
- Champion food safety standards and HACCP compliance across operations.
