Epochal Hotels Pty Ltd's The Tumby in Tumbulgum is seeking a Head Chef to lead a high-volume kitchen during a state-of-the-art renovation. You will craft a modern, smoke-infused menu, mentor a kitchen team and work with the venue manager and marketing to grow offerings.

You will manage costs, stock and rosters, ensure health compliance and deliver exceptional dining experiences with locally sourced seafood and seasonal ingredients.

Set on the banks of the Tweed and Rous Rivers, Tumbulgum Tavern, affectionately known by locals as 'The Tumby', is a true icon of the Tweed. As the oldest licensed pub in the region, The Tumby has been pouring pints, serving hearty meals and bringing the community together for well over a century.

We are undergoing a complete state-of-the-art kitchen renovation, giving you a blank canvas to build a new food offering. We are elevating our pub menu to focus on live-fire charcoal cooking, paired with stunning riverside views. This is your chance to step into a Head Chef, leadership role, design a modern, smoke-infused menu, and build a kitchen culture you are proud of.

ABOUT THE ROLE:

As the Head Chef you will be responsible for all Kitchen operations.

Day to day leadership and operation of the kitchen.

Working with the Executive Chef, Venue Manager, Marketing team to promote our food offerings and identify areas for growth.

Recruit, mentor, and lead a high-performing kitchen team, establishing a positive, organized, and smooth-running operation.

Ensuring the kitchens comply with health regulations and are clean, tidy and functional at all times.

Costed menu writing and a flair for creativity.

Stock control/purchasing aligned to budgets and procedures.

Operation and financial control within set department budgets.

Kitchen roster management and day-to-day people management of your team.

ABOUT YOU:

Must have experience as a Head Chef or similar leadership role within a high-volume food environment.

Exceptional culinary skills, with a strong understanding of food preparation techniques and presentation.

A passion for using locally sourced seafood and seasonal ingredients, with a creative flare for menu development.

Strong leadership and team management abilities, with excellent communication skills.

Must be experienced in managing food costs, inventory, and kitchen operations.
