Biànca in Brisbane is seeking a skilled Chef de Partie with Italian cuisine experience to join our high-performing kitchen team. You will own your section, manage prep quality and par levels, and help run the pass while maintaining our menu standards.

You will mentor junior staff, collaborate with the Sous Chef, and thrive under pressure in a fast-paced environment, upholding food safety and recipe execution.

The Role

Biànca is looking for a highly skilled and qualified Chef de Partie with experience in Italian cuisine to join our high-performing kitchen team. In this role, you will take ownership of your section, manage prep quality and par levels, and help run the pass while contributing to a diverse, high-quality menu.

Beyond cooking, you will lead by example - working closely with the Sous Chef to mentor junior staff and maintain our standards of excellence in taste, speed, and presentation. This position requires exceptional attention to detail, strong leadership, and the ability to thrive under pressure in a fast-paced environment.

Skills & Experience

• Proven experience as a Chef de Partie in a high-volume, quality venue
• Hands-on experience with high-volume pasta making, oven work, and hot sections
• Confidence running the pass and maintaining quality under pressure
• Ability to mentor junior chefs and support the Sous Chef
• Commitment to food safety, hygiene, and strict recipe execution
• Adaptable, positive attitude with strong team communication
• Commercial cookery qualification, apprenticeship, or equivalent experience
