Qualifications

• Certificate III in Commercial Cookery or Kitchen Management (or higher) is required.
• At least 12 months' recent, relevant experience as a cook in a commercial kitchen.
• Ability to prepare, season and cook chicken and other takeaway meals to consistent quality.
• Experience operating grills, ovens and cooking equipment with proper temperatures and hygiene.

Responsibilities

• Prepare and cook charcoal chicken, takeaway meals and related dishes per recipes and standards.
• Inspect ingredients for quality, freshness and suitability for preparation.
• Marinate, season and prep chicken, meats and other components before cooking.
• Operate charcoal grills, ovens and other cooking equipment with correct temperatures.
• Monitor cooking times to ensure thorough cooking and consistent quality.
• Prepare vegetables, sides, sauces and accompaniments for daily service.
• Portion, plate and package meals according to orders and presentation standards.
• Maintain consistent preparation methods and portion control during busy periods.
• Assist with stock checks, storage and daily food preparation estimates.
• Guide junior staff on cooking procedures and hygiene.
