Job summary

XS Espresso Newcastle is seeking an experienced Chef to join our busy kitchen team on a full-time basis. You will plan, prepare, cook, and present a range of breakfast, brunch, and lunch dishes in line with our menu and recipes.

The right candidate will have a commercial cookery qualification, proven ability to work under pressure during peak service, and a strong commitment to high standards of food safety, hygiene, and presentation.

Qualifications

• Relevant qualification in Commercial Cookery (Certificate III or IV or equivalent).
• Experience as a Chef in a commercial kitchen, café, or restaurant.
• Knowledge of a range of cooking methods and kitchen practices.
• Experience preparing and presenting meals to a consistent standard.
• Knowledge of food safety, hygiene, storage and temperature control.

Responsibilities

• Plan and prepare daily food requirements based on the café's menu and service.
• Prepare, season, cook, and present breakfast, brunch, lunch, and café dishes.
• Develop and refine recipes to maintain variety, quality and consistency.
• Determine quantities of ingredients for preparation and service.
• Prepare ingredients using appropriate techniques (cutting, marinating, portioning).
• Cook using methods including grilling, frying, baking, roasting, steaming, sautéing.
• Monitor quality, taste, texture and presentation during prep and service.
• Ensure meals follow recipes, portions and presentation standards.
• Inspect ingredient quality and storage before/after prep.
• Assist with ordering and receiving supplies and stock management.
• Monitor food usage and minimise wastage.
• Maintain stock rotation and hygienic prep areas.
• Coordinate preparation of multiple dishes during busy service.
• Work collaboratively with kitchen staff to meet service needs.
