Job summary

Farmgate to Plate Burraneer, part of the Marro Group, is seeking a Qualified Retail Butcher / Store Manager. You will oversee daily operations, manage the 2IC, prepare premium meat, maintain displays, and deliver exceptional customer service.

This full-time role requires a recognised butchery qualification, hands-on leadership, and weekend availability, with opportunities to work across sister venues.

Qualifications

• A recognised butchery qualification and proven experience as a qualified butcher or butcher manager.
• Strong knife, portion-cutting and meat-preparation skills.
• Experience across retail displays, customer service and value-added production.
• Ability to supervise a team and remain composed under pressure.
• Strong knowledge of food safety, hygiene, stock rotation and compliance.
• Professional appearance and pride in an immaculate workplace.
• Friendly, reliable, energetic and comfortable speaking with customers.
• Ability to manage own section without supervision and maintain high standards.
• Availability to work a 5 day rotating roster including one weekend day.

Responsibilities

• Provide friendly, professional service and knowledgeable product and cooking advice.
• Cut, trim, bone and portion meat accurately and consistently.
• Prepare fresh, attractive displays that showcase premium products.
• Assist with value-added production.
• Coordinate and support the team during daily trade.
• Assist with ordering, receiving, rotation, yields and waste control.
• Monitor product freshness, portioning and presentation.
• Support opening, closing and day-to-day running of the butchery.
• Maintain hygiene and compliance records.
• Keep preparation areas, equipment, cool rooms and displays immaculate.
• Operate knives and other butchery equipment safely.
• Lead the department in Operations Manager’s absence.
