Job summary

The Dry Dock Public House and Dining Room in Balmain is seeking a Bar Manager to lead daily bar operations, curate the beverage program, and inspire a professional team. You’ll manage a busy, award‑winning venue with a 470‑bottle list, 51 by the glass, 16 beers on tap, and classic cocktails.

Bring 3+ years in a premium bar/restaurant leadership role, deep knowledge of cocktails, wine and spirits, strong organisation, and experience with POS and stock systems.

• 3+ years’ experience in a leadership role within a premium bar or restaurant.
• Strong knowledge of cocktails, wine, beer, and spirits.
• Proven ability to lead, motivate and develop a team.
• Great organisational and communication skills.

About the Role

As Bar Manager, you’ll oversee daily bar operations, curate our beverage program, and inspire a passionate, professional team. You’ll play a hands‑on leadership role, ensuring every guest enjoys an outstanding experience.

With a 470-bottle wine list (51 by the glass), premium spirits, 16 beers on tap, and a classic cocktail list, this is your chance to manage one of Sydney’s most dynamic bars.

What You’ll Bring

Key Responsibilities

• Manage budgets, cost control, and financial performance
• Manage purchasing, POS administration, stock control and supplier relationships
• Support marketing, promotions, and community initiatives
• Systems knowledge in; Lightyear / BePoz / Microsoft Office (specifically Excel) / Stocktaking processes and stock control / POS management and ideally Tanda / rostering
