Job summary

ALEX and Co. in Parramatta is seeking a hands-on Bar Manager to own the bar operation, lead the team and drive growth in a high-volume hospitality setting.

You will be responsible for beverage sales, stock control, COGS, labour productivity and team performance, while delivering a seamless guest experience across bar, restaurant and functions. This role requires strong leadership, comprehensive cocktail knowledge, and a commercial mindset to grow beverage revenue, with ownership and hands-on

Full-Time | 80,000–85,000 + Super + Performance Incentives

ALEX and Co. is a high-volume restaurant, bar and functions venue located in the heart of Parramatta.

We are looking for a hands-on, commercially focused Bar Manager to take ownership of our bar operation, lead the team and help drive the next stage of growth.

This is not simply a supervisory role. We are looking for someone who understands both great hospitality and the commercial side of running a successful bar — including beverage sales, COGS, stock control, labour productivity and team performance.

The Role

As Bar Manager, you will take ownership of the day-to-day performance of the bar and work closely with our management, restaurant and functions teams.

Your responsibilities will include:

Leading, training and developing the bar team

Maintaining strong cocktail, wine, beer and spirits knowledge across the team

Driving beverage sales and increasing average guest spend

Creating a strong culture of recommendations, upselling and trade-ups

Managing beverage ordering, stock control, stock takes and inventory

Monitoring beverage COGS, wastage and stock variances

Managing bar labour and improving team productivity

Maintaining high standards of bar presentation, cleanliness and organisation

Ensuring opening and closing procedures are consistently followed

Working with management on cocktail and beverage menu development

Supporting functions, events and high-volume service periods

Working closely with FOH and kitchen leadership to deliver a seamless guest experience

Maintaining RSA, licensing and operational compliance

Building a professional, accountable and positive bar culture

About You

We are looking for someone who:

Has strong Bar Manager or senior bar leadership experience

Has experience in a high-volume restaurant, bar or hospitality venue

Has excellent cocktail and beverage knowledge

Understands stock control, beverage COGS, wastage and margins

Is commercially minded and understands how to grow beverage revenue

Can confidently lead, train and hold a team accountable

Is highly organised and comfortable managing a busy operation

Leads from the floor and is willing to be hands-on during service

Has strong communication and leadership skills

Takes ownership rather than waiting to be directed
