Bar Manager

Signature Catering NSW Pty Ltd operates across multiple venues associated with Merrylands RSL, delivering high-quality catering, dining, and hospitality services to club members, local patrons, and event guests. As the business continues to grow, we are seeking a suitably qualified and experienced hospitality professional to join our team as Bar Manager.

The successful candidate will work within a fast‑paced, high‑volume environment that services a diverse customer base. Our venues provide full‑service dining, bar operations, and function hosting, with strong patron demand during peak service periods, major events, and club functions. We are looking for an experienced and enthusiastic Bar Manager to join our team and help us continue to provide an unforgettable experience for our patrons.

Job Duties

• Overseeing daily operations across bar and lounges, Signatures buffet bar, Sage 2160 and bar, and Event Spaces.
• Leading by example to maintain high service standards and a strong customer‑centric culture
• Planning and booking entertainment activities for bar and dining venues
• Training and supervising team members to ensure a productive and skilled workforce
• Working closely with marketing to coordinate and update promotions
• Responding to guest needs and complaints, and applying effective service recovery strategies
• Reviewing guest satisfaction and implementing improvements where necessary
• Managing staff rosters, delegating responsibilities, and monitoring performance
• Controlling inventory and ensuring stock levels, requisitions, and quality control
• Ensuring compliance with liquor licensing, food safety, WHS and ESG practices
• Liaising with the Head Chef and kitchen team to coordinate food service delivery
• Maintaining all F&B spaces in alignment with quality and safety standards
• Ensuring compliance with occupational health and safety regulations
• Observing liquor, gaming, health and other laws and regulations
• Ordering and tracking stock to meet demand and cut waste.
• Tracking sales, cutting costs, and writing budget reports for venue owners.
• Running promotions and special events to bring in new customers and reward regulars.
• Quality checks: making sure all drinks are made and served to the venue’s standards.

Qualifications & Experience Required

• Diploma in Management Studies or equivalent qualification
• Minimum 2 years’ experience in a Bar Manager or similar supervisory role within the hospitality industry
• Exceptional customer service skills with strong communication and interpersonal abilities
• Teamwork and leadership capability, with the ability to support and mentor others
• Ability to work under pressure in fast‑paced, high‑volume service settings
• Operational flexibility and willingness to assist in other positions when required
• Problem‑solving skills and the ability to work independently
• Current RSA certification (New South Wales)

This position is a full‑time ongoing position, working 38 hours per week. Contract type: Permanent. Working Hours: 38 hours per week. Location: Merrylands, New South Wales. Annual Salary: $80,000 - $85,000.
