Job summary

The Westin Brisbane, part of Marriott International, is seeking a Banquets Chef de Partie to lead a section of the kitchen in a luxurious, high-energy setting. You will mentor junior team members and ensure top-quality dishes with attention to presentation and consistency.

You will work closely with the Executive Chef and other outlets to maintain kitchen efficiency, uphold health and safety standards, and contribute to menu development. 38 hours per week, with rotating shifts.

Qualifications

• Must have active Australian working rights.
• Two years' experience as Chef de Partie in a 5 star Luxury Lifestyle Hotel environment.
• Full availability for rotating schedule.
• Knowledge of HACCP and Workplace Health & Safety.
• Experience training and developing Commis Chefs & Apprentices.
• Stock control and ordering experience.
• Ability to promote ideas and make sound decisions under pressure.

Responsibilities

• Supervise with proven experience in an events kitchens.
• Coordinate activities within your section during busy periods and support the team for smooth operations.
• Prepare and present high-quality dishes within your designated section.
• Ensure all food preparation and storage meets health, safety and hygiene standards.
• Work closely with the Executive Chef, Sous Chef, and other team members to ensure kitchen efficiency.
• Collaborate with other F&B outlets to ensure efficiency.
• Innovate and contribute ideas for menu development and improvement.
• Anticipate and address guest needs, offering personalized recommendations and maintaining guest satisfaction.
• Uphold brand values and ensure consistent delivery of high-quality service.

Role Overview:

As a Banquets Chef de Partie, you will lead by example, overseeing a specific section of the kitchen while ensuring the highest standards of food quality, presentation and consistency. From crafting dishes that delight our guests to mentoring junior team members, you’ll play a key role in creating memorable dining experiences across our venues. Key Responsibilities:

About You:

• Commercial Cookery Trade Certificate and minimum of 2 years' experience in a Chef de Partie role in a 5 star Luxury Lifestyle Hotel environment
• Must have active Australian working rights
• Have full availability for rotating schedule
• The confidence to promote ideas and make sound decisions under pressure
• Proven track record of training and development of Commis Chefs & Apprentices
• Full knowledge of HACCP and Workplace Health & Safety
• Build and maintain lasting relationships with both internal and external stakeholders
• Financial acumen with Food Costs and Payroll Costs and be able to talk to these
• Experience with stock control and ordering
