Job summary

Blue Collar Recruitment is seeking an experienced and trade-qualified Chef to join a high-volume aviation catering operation at Sydney Airport. This is a large-scale production kitchen role, not a traditional restaurant, with a rotating 7-day roster and full-time hours on a casual basis.

You will work to airline specifications, follow HACCP and food-safety protocols, and contribute to a disciplined team focused on accuracy, efficiency, and on-time flight preparation.

Qualifications

• Certificate III or IV in Commercial Cookery.
• Minimum 7 years’ experience as a fully qualified Chef.
• Experience in high-volume food production.
• Sound knowledge of HACCP and food safety standards.
• Availability to work across a 7-day rotating roster, including weekends and public holidays.

Responsibilities

• Prepare, cook, and assemble hot and cold food items in accordance with airline specifications.
• Follow standardised recipes, production schedules, and presentation guidelines with precision.
• Monitor food quality at all stages of preparation to ensure consistency and compliance.
• Portion and label products accurately according to control specifications.
• Ensure timely completion of production targets to meet flight schedules.
