Job summary

Assistant Restaurant Manager at Bannisters Mollymook leads daily restaurant operations alongside the Restaurant Manager, driving service excellence and guest satisfaction in a high-end setting.

You'll coach and develop a diverse team, manage rosters and stock, ensure RSA compliance, and collaborate with kitchen and hotel to deliver seamless dining experiences that reflect the Rick Stein by Bannisters hospitality legacy.

Qualifications

• Previous experience in a leadership role within a high end, a la carte or hatted restaurant environment.
• A current NSW Responsible Service of Alcohol (RSA) and NSW Competency Card (essential).
• A genuine passion for hospitality and delivering exceptional guest experiences.
• Strong understanding of food and beverage operations, including restaurant service standards.
• The ability to lead, coach and inspire a diverse team.
• Proven ability to manage multiple priorities and perform effectively in a fast-paced, high-pressure environment.
• Strong organisational skills, attention to detail and a proactive approach to operational excellence.
• Flexible availability, including evenings, weekends and public holidays as required by the business.

Responsibilities

• Support the day-to-day operation of the iconic Rick Stein's restaurant at Bannisters by the Sea.
• Lead service periods, ensuring a smooth, professional and memorable guest experience.
• Coach, mentor and motivate team members to deliver exceptional service standards.
• Assist with training and development to build a high-performing team culture.
• Manage guest feedback professionally and resolve service issues proactively.
• Support rostering, labour management and operational administration.
• Monitor stock control, ordering and inventory processes.
• Ensure compliance with food safety, liquor licensing and workplace health and safety requirements.
• Work closely with the kitchen and wider hotel teams to deliver seamless operations.
• Uphold the service standards and reputation of the Rick Stein and Bannisters brands.
