Job description

Assistant Outlets Manager

The StandardX, Melbourne

Help us create a Melbourne dining experience that’s anything but Standard.

At The StandardX Melbourne, food, drink, music, art and design come together in the heart of Fitzroy. We’re looking for an Assistant Outlets Manager with personality, presence and a genuine love of hospitality to help bring that experience to life.

A great bar or restaurant experience is about more than what’s on the plate or in the glass. It’s the welcome, the energy, the music, the conversation and the details — and knowing how to read the room.

Working closely with the Executive Chef, you’ll help lead the day-to-day operation of our restaurant and bar. You’ll be visible on the floor, ready to step in wherever needed, and committed to creating memorable experiences for guests while building a confident, connected team.

As part of Hyatt Hotels, we are committed to caring for people so they can be their best. We believe exceptional guest experiences begin with empowered colleagues who take pride in their work, support one another and strive for excellence every day.

We’re not looking for scripted hospitality. Bring your own style, your ideas and your sense of fun.

What you’ll do
  • Help lead the restaurant and bar operation, setting the pace on the floor and keeping service running smoothly.
  • Welcome guests, read the room and create experiences that make people want to return.
  • Support the department with planning, coordinating and delivering daily operations.
  • Lead, coach and develop colleagues, building a team that takes pride in its work and supports one another.
  • Work across the operation, from restaurant service to cocktails, wine and coffee.
  • Share your knowledge through engaging cocktail, wine and service training that builds confidence and consistency.
  • Help drive revenue through thoughtful recommendations, genuine guest engagement and strong service standards.
  • Support the management of stock, purchasing, labour and operating costs, with a focus on commercial performance.
  • Build strong relationships across the hotel and encourage collaboration, creativity and a one-team approach.
  • Ensure the team follows RSA, food safety and workplace safety standards, along with hotel and licensing requirements.
  • Bring energy, ideas and a sense of fun to every shift.
About you

We take the details of design and guest experience seriously, but we don’t take ourselves too seriously.

Standard People are vivid, dynamic, curious and engaging. You understand that great hospitality isn’t one-size-fits-all. You bring your own style while knowing how to be part of something bigger.

You’ll bring:

  • Experience in a management role in a quality hotel environment.
  • Strong restaurant and bar experience, including cocktails, wine and coffee.
  • A current Victorian RSA.
  • Confidence leading, coaching and developing a team.
  • A genuine passion for food, drinks, nightlife and Melbourne’s hospitality scene.
  • Commercial awareness and an understanding of revenue, labour costs, stock control and profitability.
  • Experience with POS systems and confidence using Microsoft Office.
  • Knowledge of food safety, responsible service and safe workplace practices.
  • Strong communication, organisation and problem-solving skills.
  • The ability to stay calm when it gets busy and keep the energy up around you.
  • Flexibility to work days, evenings, weekends and public holidays.
  • Full working rights in Australia.

Above all, you’ll bring personality, energy and a genuine desire to create a brilliant place for our guests and our team.
