Artisanal Bakehouse in Bentleigh, Melbourne, is seeking a Pastry Chef to lead the daily production of viennoiserie, pies, and sandwiches, and to assist bakers with shaping sourdough when required.

You will laminate croissants and other pastries, prepare fillings, and ensure high standards of quality across sweet and savoury offerings, while training junior staff and maintaining pastry stock and safety procedures.

Qualifications

• Australian Certificate IV in Patisserie or equivalent.
• Minimum 1 year of full-time hands-on pastry chef experience.
• Knowledge of sweet pastry lamination and fillings.

Responsabilités

• Laminating and producing croissants, danishes and other baked goods.
• Mixing and preparing laminated and enriched doughs from scratch
• Confident and efficient use of a commercial kitchen equipment.
• Mixing, shaping, fermenting, proofing, baking and finishing products
• Preparing fillings, components and other pastry products. Preparing pie fillings and sandwiches.
• Maintaining high standards of quality and consistency
• Organising and maintaining the pastry section
• Supporting and training junior pastry team members
• Assisting with stock control and ordering
• Following food safety and hygiene procedures
