Job summary

Dukes The Palm Dubai Hotel, part of the Minor Hotels collection, is seeking a professional Sous Chef to join the kitchen leadership. You will be second in command, following the Executive Chef's specifications and guiding teams to uphold Dukes The Palm standards.

You will shape menus, manage kitchen operations, and ensure quality, portion control, and timely service across all stations in a fast-paced luxury setting.

Qualifications

• Proven work experience as a Sous Chef.
• Previous experience in a large hotel with at least 500 keys in a luxury property.
• Pre-opening experience is an advantage.
• Active listening and effective communication skills.
• Flexibility to work in shifts.
• Strong organizational and multitasking skills in a fast-paced environment.

Responsibilities

• Sous Chef influences the skills, knowledge, attitude, communication, and team spirit of every kitchen employee.
• Assist in the preparation and design of all food and drinks menus.
• Ensure that the kitchen operates in a timely way that meets Dukes The Palm quality standards.
• Responsibilities for all stations of kitchen ensuring standards are kept.
• Order supplies to stock inventory appropriately.
• Demonstrate strong fundamental cookery skills across Cold Kitchen and Hot Kitchen.
• Understand food costing and its impact on prep, waste, and ordering.
• Liaise with other Sous Chefs, Chef de Cuisines & Junior Sous Chefs regarding items or staff needs.
• Supervise and carry out production of all dishes according to recipes and specs; ensure taste, portions and presentation meet standards.
• Control food cost, portions and market lists with procurement; keep up to date with cost processes.
• Maintain a positive and professional approach with coworkers and guests.
