Job summary

SUSHISAMBA Dubai on the 51st floor of The St. Regis Dubai invites a Demi Chef de Partie – Robata to join our dynamic culinary team. You will contribute to delivering bold Robata dishes in a high-volume, luxury dining environment.

Ideal candidates have 2–3 years of relevant experience, Robata or Japanese grilling exposure, and solid knowledge of charcoal cooking in upscale settings. You will perform under pressure with consistency and meticulous attention to detail.

Qualifications

• At least 2–3 years of relevant culinary experience.
• Robata or Japanese grilling experience preferred.
• Experience in upscale, fine-dining or high-volume restaurants.
• Good knowledge of charcoal grilling and ingredient preparation.
• Ability to perform under pressure with consistency and attention to detail.

Responsibilities

• Prepare meats, seafood, vegetables, marinades and sauces for Robata service.
• Operate the Robata grill under the direction of senior chefs.
• Follow approved recipes, cooking temperatures and presentation standards.
• Complete mise en place accurately before each service.
• Assist with portion control, stock rotation and waste reduction.
• Maintain a clean and safely operated grilling station.
• Follow HACCP, food-safety and sanitation requirements.
• Support the section during busy, high-volume service periods.
