SUSHISAMBA Dubai on the 51st floor of The St. Regis Dubai invites a talented Junior Sous Chef – Robata to join our dynamic kitchen team.

You will lead the Robata station, uphold quality, and mentor junior chefs in a fast-paced, luxury dining environment. The ideal candidate brings 3–5 years Robata or high-end grilled cuisine experience, proven supervisory skills, and a passion for precise technique, presentation, and HACCP standards in a premium restaurant setting.

Qualifications

• Minimum 3–5 years in Robata or high-end grilled cuisine.
• At least 1 year of experience in a supervisory junior sous role leading a large culinary team.
• Strong knowledge of Robata grilling techniques and Japanese ingredients.
• Experience in luxury premium or high-volume restaurant environment.
• Strong leadership, organization and communication skills.

Responsibilities

• Lead and oversee the daily operation of the Robata section.
• Ensure consistency in food quality, cooking techniques and presentation.
• Support the Sous Chef and senior culinary team during high-volume service.
• Train, guide and supervise junior chefs within the section.
• Maintain mise en place, stock control and waste management.
• Ensure compliance with food safety, hygiene and HACCP standards.
• Maintain exceptional culinary standards in a fast-paced kitchen environment.
