Wynn Al Marjan Island in the United Arab Emirates is seeking a Pastry Sous Chef – Conservatory Food Hall to join the luxury culinary team. The role supports the Executive Chef in daily production, ensuring quality, presentation, and consistency across all pastry items.

Ideal candidates hold a recognized culinary qualification in Pastry Arts, have luxury hotel/resort pastry experience, and can supervise production teams while maintaining HACCP standards and food safety.

Qualifications

• Recognized culinary qualification in Pastry Arts / Pâtisserie.
• Luxury hotel/resort pastry production experience.
• Strong knowledge of classical and contemporary pastry techniques.
• Proven ability to supervise pastry production teams.
• Working knowledge of food safety, HACCP principles.
• Excellent organizational and interpersonal skills.

Responsibilities

• Oversee daily pastry production under the Executive Chef.
• Ensure quality, presentation and consistency of all pastry items.
• Supervise and mentor pastry team during production periods.
• Maintain hygiene, sanitation and food safety standards.
• Assist with production planning, scheduling, and prioritization.
• Minimize waste through proper handling and storage.
• Support training and on-the-job development of team members.
