Job summary

Raffles Dubai, part of Raffles Hotels & Resorts, invites a Commis II to join the Pastry Kitchen, assisting with mise en place, food preparation and presentation under the brigade. Your role supports the pastry team, ensuring high standards and brand values in a luxury setting.

You will work closely with the Chef de Partie, maintain hygiene and safety compliance, and contribute to innovative dessert ideas while upholding impeccable service in a celebrated destination.

Qualifications

• Average reading, writing and oral proficiency in the English language.

Responsibilities

• Report for duty punctually in correct uniform.
• Coordinate shift with Chef de Partie for mise-en-place and service.
• Take orders from Chef de Partie and execute accurately.
• Maintain daily stock checks and kitchen transfers as directed.
• Keep the section clean and organized.
• Attend daily and monthly pastry meetings.
• Record any equipment issues to Pastry Chef and follow up.

Job Description

We invite you to join the world of luxury hospitality at Raffles Dubai as our new Commis II in Pastry Kitchen to prepare mise en place and food preparation and assists with food presentation as part of the kitchen brigade. Promotes the work culture and the company’s core values.

DUTIES & RESPONSIBILITIES

• To report for duty punctually wearing the correct & clean uniform at all times
• Organize together with Chef de Partie the shift on his/her section with regard to mise-en-place production and its service.
• Take orders from his/her Chef de Partie and carry them out in the correct manner
• Together with his/her Chef de Partie to write daily dry store, food requisitions and kitchen transfers on the appropriate forms for the approval of the Executive Chef / Pastry Chef in order to achieve the high stock rotation desired in the section.
• Maintain good employee relations and motivate colleagues
• Work to the specifications received by the Chef de Partie regarding portion size, quantity and quality as laid down in the recipe index.
• Responsible for completing the daily checklist regarding mise-en-place and food storage.
• Attend daily and monthly meetings with the Pastry Chef and other meetings as requested by the Executive Chef / Pastry Chef.
• Report any problems regarding failure of machinery and small equipment to the Pastry Chef and to follow up and ensure the necessary work has been carried out.
• Check the main information board Banquets or other information regarding the operation.
• Keep the section clean and tidy.
• Pass all information to next shift
• Accidents and sickness to be written in log Book and report to the Executive Chef / PastryChef.
• Assist the PastryChefin composing new recipes and menu ideas.
• Have a complete understanding of and adhere to the company’s policy relating to fire, hygiene and safety.
