Job summary

InterContinental Dubai Marina Hotel & Residences is hiring a Demi Chef De Partie to join our luxury hotel kitchen in Dubai. You will prepare and cook Mediterranean dishes, manage mise en place, and ensure food safety standards in a fast-paced environment.

The ideal candidate has experience in Mediterranean cuisine, previous Demi Chef De Partie roles in hospitality settings, and strong teamwork and communication skills.

Qualifications

• Experience in Mediterranean cuisine strongly preferred.
• Previous Demi Chef De Partie experience in a hotel or restaurant setting.
• Strong understanding of food safety and hygiene practices.
• Able to work well in a team and communicate effectively.
• Passionate about cooking with a willingness to learn.

Responsibilities

• Prepare and cook Mediterranean dishes according to established recipes and presentation standards.
• Carry out daily mise en place for the assigned section and ensure all items are ready before service.
• Prepare a variety of Mediterranean hot dishes, including grilled meats and seafood, roasted vegetables, rice, pasta, sauces, stews, and traditional hot mezze.
• Check the freshness and quality of ingredients before preparation.
• Follow proper food storage, labelling, dating, and FIFO procedures.
• Assist with daily stock checks and communicate shortages or quality concerns to the Chef de Partie.
• Control food waste and use ingredients efficiently while maintaining quality.
• Follow HACCP, food safety, hygiene, and health and safety procedures at all times.
• Clean and maintain kitchen equipment and report any defects or maintenance requirements.
• Assist in training and supporting Commis Chefs and other junior kitchen colleagues when required.
