Job summary

FIVE is seeking an experienced Restaurant Manager for a luxury hotel dining concept in Dubai. You will lead the restaurant team, oversee service quality, dining ambiance, and guest satisfaction in a high-end Mediterranean setting.

The role requires 3+ years in a similar leadership position, strong knowledge of Mediterranean cuisine, and the ability to manage budgets while delivering an exceptional guest journey.

Qualifications

• Minimum 3 years as Assistant/Restaurant Manager in a Luxury Hotel preferred.
• Experience as Restaurant Manager or leadership role in upscale Mediterranean concept restaurant with high-end ambience and DJs is desirable.
• Extensive knowledge of Mediterranean cuisine, culture, and dining etiquette.
• Flexibility to work weekends and holidays in a hotel setting.
• Proficient in Word, Excel, Outlook and POS systems.
• Health and Safety, Food Hygiene, and best practices in restaurant operations.
• Track record in achieving financial targets and managing budgets with cost control.
• Excellent guest-facing energy and professional grooming aligned with FIVE standards.
• Strong organizational and leadership skills, with ability to inspire a diverse team.

Responsibilities

• Lead restaurant operations in a luxury hotel environment.
• Oversee service quality, guest experience, and staff performance.
• Collaborate with culinary teams to craft Mediterranean cuisine offerings.
• Ensure health, safety and hygiene compliance in all outlets.
• Drive revenue and manage budgets with cost-control measures.
• Hire, onboard, and train restaurant team members.
• Maintain SOPs for opening/closing, reservations, seating, and service flow.
• Engage with guests to ensure seamless and memorable dining experiences.
• Monitor inventory and supplier performance for quality and cost.
• Lead team with proactive communication and guest satisfaction focus.
