Qualifications

• 3-4 years of experience in a similar role within high-volume, high-end kitchens.
• Standalone restaurant/beach club experience preferred; 5-star hotel kitchen experience also considered.
• Strong technical skill in sushi, sashimi, and Japanese knife techniques.
• Proven ability to maintain quality and consistency under high-volume pressure.
• Strong leadership and team management skills.
• Flexibility to work shifts, weekends, and public holidays in a fast-paced hospitality environment.

Responsibilities

• Lead and manage the sushi section, ensuring consistent quality, presentation, and speed across service.
• Oversee sourcing, quality control, and handling of fish and seafood to the highest food safety standards.
• Develop and refine sushi and sashimi menu items in line with Bâoli's coastal French-Mediterranean concept, accented with East Asian technique.
• Train, supervise, and mentor team.
• Maintain consistency and plating standards during high-volume peak periods.
• Manage stock levels, wastage control, and ordering for the sushi section.
• Coordinate closely with the Executive Chef and kitchen brigade on menu execution and service flow.
• Ensure full compliance with HACCP, food safety, and hygiene standards.
