Job summary

Wynn Al Marjan Island is seeking a Head Dim Sum Chef - Chinese Cuisine to lead the dim sum kitchen within our luxury hospitality group on the Ras Al Khaimah coast. You will design and refine dim sum menus, supervise daily mise en place and production, and ensure top-tier taste, texture, and presentation across all dim sum offerings.

The candidate should have 8–10 years of dim sum experience in luxury settings, strong leadership, and fluency in English; Cantonese or Mandarin is a plus.

Qualifications

• 8–10 years' experience in luxury dim sum service.
• Ability to lead a fast-paced, high-volume dim sum team.
• Culinary Arts degree; Chinese cuisine training desirable.
• Fluent in English; Cantonese or Mandarin desirable.

Responsibilities

• Lead and manage the dim sum kitchen team and menu items.
• Oversee mise en place, schedules, and service readiness.
• Ensure HACCP compliance and hygiene standards.
• Train chefs in dim sum techniques and dough preparation.
• Monitor food cost and inventory.
• Collaborate with Executive Chinese Chef to align with brand standards.
• Engage with guests and respond to feedback.
