The Kitchen Steward - Hotel Stewarding helps maintain smooth food and beverage operations by keeping dishes, pots, pans, utensils, kitchen equipment, and work areas clean, safe, and ready for use. The role supports chefs, service teams, and stewarding supervisors by following cleaning procedures, reducing wastage, handling rubbish according to schedules, and maintaining hygiene standards across assigned kitchen and back‑of‑house areas.

Key Responsibilities

• Clean and wash dishes according to established hotel performance standards.
• Wash pots, pans, trays, kitchen utensils, and operating equipment safely and thoroughly.
• Empty rubbish bins according to garbage schedules and hotel waste handling procedures.
• Operate dishwashing machines correctly and follow approved cleaning procedures.
• Use cleaning chemicals safely and only as instructed by hotel standards and stewarding procedures.
• Maintain a clean, organized, and hygienic place of work and surrounding kitchen areas at all times.
• Follow HACCP procedures and understand their importance in maintaining food safety and hygiene.
• Support opening and closing procedures established for the stewarding department.
• Monitor operating supplies and use them carefully to reduce spoilage, breakage, and wastage.
• Assist in monthly, quarterly, bi‑yearly, and yearly inventory checks of operating equipment.
• Handle guest and employee enquiries courteously and report unresolved concerns to supervisors.
• Report guest complaints, employee concerns, equipment issues, or cleaning problems to supervisors for follow‑up.
• Work with teamwork and lateral service to support chefs, food and beverage colleagues, and other hotel departments.
• Attend staff meetings, departmental training, hotel training, and related operational activities when scheduled.
• Report to duty punctually in the correct uniform and name tag.
• Maintain high standards of personal appearance, hygiene, grooming, and professional conduct.
• Follow the hotel employee handbook, rules, regulations, and department operating procedures.
• Comply with fire, hygiene, health, safety, and local legislative requirements.
• Remain flexible to rotate within Food and Beverage sub‑departments or other hotel departments when assigned.
• Respond to operational changes based on hotel business demands and guest service needs.
• Carry out reasonable secondary duties assigned by the Assistant Stewarding Manager, supervisor, or hotel management.

Ideal Profile

• Previous experience in hospitality, stewarding, kitchen cleaning, hotel back‑of‑house operations, or a similar environment is preferred.
• Knowledge of stewarding operational standards, dishwashing procedures, and kitchen hygiene expectations.
• Basic understanding of HACCP, food safety, cleaning chemicals, waste handling, and workplace safety.
• Ability to operate dishwashing machines and handle kitchen utensils, pots, pans, and equipment with care.
• Reliable, punctual, and physically able to work in a fast‑paced kitchen and stewarding environment.
• Strong cleanliness habits with attention to hygiene, organization, and safe work practices.
