Wynn Al Marjan Island seeks a Sous Chef – Italian & Seafood to join our Culinary team in Ras Al Khaimah. You will oversee the Italian & Seafood kitchen, drive menu development, and ensure consistency with our standards.

The candidate will bring strong Italian/seafood expertise, a proven leadership record in a 5-star setting, and the ability to manage costs while delivering exceptional dining experiences for guests.

Qualifications

• Strong knowledge of Italian and seafood cuisine with cost control.
• Experience in a 5-star kitchen and ability to lead a team.
• Excellent communication and supervisory skills.

Responsibilities

• Oversee daily operations of Italian & Seafood kitchen to ensure efficiency and quality.
• Monitor resource usage, optimize equipment and inventory.
• Develop weekly menus and monthly promotions with Executive Chef.
• Ensure dishes meet recipes, quality standards, and presentation guidelines.
• Lead, coach, and support kitchen staff to maintain performance.
• Maintain kitchen cleanliness and HACCP compliance.
• Address guest requests and feedback to enhance dining experience.
• Uphold health and safety practices and assist with additional duties.
