Job summary

PALAZZO VERSACE DUBAI is seeking a Commis Chef to support In-Room Dining and high-volume à la carte service in a luxury hotel setting. You will assist in food preparation, portioning, plating, and maintaining HACCP standards.

The role requires 2–3 years of experience in a similar role, preferably in a 5-star property, with strong teamwork and attention to detail. Flexibility to work shifts, weekends, and holidays is essential.

Qualifications

• Minimum 2–3 years of experience in a similar position, preferably within a 5-star luxury hotel.
• In-Room Dining, room service, or high-volume à la carte experience is preferred.
• Strong knowledge of food preparation, cooking techniques, and kitchen operations.
• Ability to work under pressure while maintaining quality and presentation.
• HACCP and food safety standards knowledge.
• Culinary qualification from a recognized institution preferred.

Responsibilities

• Prepare and cook a variety of dishes according to established recipes, standards, and presentation guidelines.
• Ensure all orders are prepared accurately, consistently, and within service time.
• Organize and maintain mise en place for smooth service.
• Coordinate with In-Room Dining team for timely preparation and dispatch.
• Maintain high standards of food quality, taste, portioning, temperature, and presentation.
• Assist with breakfast, lunch, dinner, late-night dining and guest requests as required.
• Monitor ingredient quality, freshness, storage and handling.
• Maintain a clean, hygienic workstation at all times.
• Follow HACCP, hygiene and sanitation standards.
• Minimize food wastage and support food cost control.
• Support and guide Commis Chefs within the section.
• Communicate issues, shortages, or guest requirements to the Sous Chef.
• Ensure kitchen equipment is used safely and maintained.
