Responsibilities

• Oversee stewarding division staff, facilities, procedures and costs.
• Record day-to-day procedures to Exec Cook.
• Plan and implement quarterly supply matters.
• Maintain inventory of breakage and recommend equipment purchases.
• Coordinate with HACCP authorities for audits.
• Control quality of washing tools and kitchen cleanliness; manage waste.
• Select cleaning agents and training for staff.
• Advise outlets on chemical usage, tools handling and safety to manage costs.
• Coordinate with F&B leadership to satisfy daily and next-day needs.
• Induct and train new staff.
