Job summary

Kerzner International’s Atlantis The Royal in Dubai is seeking a Head Sommelier for Carbone restaurant to lead wine strategy and guest experiences. You will work with the Restaurant Manager and Wine Manager to update the wine list, order wines and rotate stock, while delivering expert wine pairings and presenting upsell opportunities to guests.

Ideal candidates have 3+ years in luxury hotels/restaurants, a WSET Level 3 qualification, strong leadership and staff training skills, and international

Qualifications

• The ideal candidate has solid luxury restaurant or hotel experience at this level.
• Minimum 3 years in a similar luxury setting with a WSET Level 3 qualification.
• International experience preferred; proven wine list development and staff training required.

Responsibilities

• Search, select and buy wines from around the world with Procurement.
• Ensure proper storage, presentation and service of all wines.
• Maintain and develop wine stocks, sales and wine lists.
• Review the wine list regularly to appeal to a diverse guest base.
• Support managers in wine sales and advise on appropriate pairings.
