Responsibilities

• You will be responsible in ensuring that beverage standards in all areas are of exceptional level whilst adhering to Dorchester Collection values and enabling the hotel to achieve the highest levels of standards and service
• Train, coach, and mentor the bar team, modeling operational excellence and fostering continuous professional development.
• Drive the quality of the beverage program while actively sharing deep product knowledge with both internal teams and hotel guests.
• Design innovative, seasonally inspired cocktail programs that reflect current global mixology trends and enhance the hotel's brand identity.
• Collaborate with the culinary team to develop sophisticated food and beverage pairings for special events, tastings, and VIP guests.
• Establish relationships with premium vendors to secure exclusive spirits, rare vintages, and high-quality, sustainable local ingredients.
• Manage inventory control, waste reduction, and portion standards to maximize profitability without compromising on luxury quality.
• Oversee strict adherence to health, safety, food hygiene, and local liquor licensing regulations across all bar operations.
• Ensure all specialized bar tools, glassware, and equipment are meticulously maintained and operating at peak efficiency.
• You will play an integral role in the quality of our beverage offerings and will share their knowledge with our teams and guests alike.

Requirements

• As a detail orientated and hands‑on team player with strong interpersonal skills, you will thrive on mentoring high potential team members to achieve better results and celebrate success within the team.
• You are passionate about our industry and are aware of all the latest F&B trends and developments around the world.
• Proven experience as a Head Mixologist within a 5‑star hotel, or world‑class cocktail lounge.
• Elite knowledge of global cocktail trends, spirit profiles, extraction techniques, and advanced menu engineering.
• Strong track record of mentoring and upskilling diverse bar teams, fostering a culture of high performance and mutual respect.
• Deep understanding of beverage cost controls, inventory management systems, vendor negotiation, and revenue optimization.
• Polished presentation and interpersonal skills, with the ability to engage confidently with high level guests.
• English is the primary language used in our hotel. You can comfortably communicate in this language. Other languages including Arabic, Italian, French or Spanish are highly desirable.
• You will have a relevant professional certification or hotel school diploma and bring a wealth of past experience working for luxury hotels, at well‑renowned hotels.
