Dorchester Collection seeks a Head Mixologist in Dubai to lead beverage programs across luxury hotels. You will design innovative cocktails, mentor the bar team, and ensure exceptional service and product knowledge for guests and colleagues alike.

You will collaborate with culinary teams on pairing experiences, manage vendor relations, and uphold premium standards and regulatory compliance in a world-class hospitality environment.

Qualifications

• Proven experience as a Head Mixologist within a 5-star hotel or world-class cocktail lounge.
• Elite knowledge of global cocktail trends, spirit profiles, extraction techniques, and advanced menu engineering.
• Strong track record of mentoring and upskilling diverse bar teams, fostering a culture of high performance and mutual respect.
• Deep understanding of beverage cost controls, inventory management systems, vendor negotiation, and revenue optimization.
• English is the primary language used in our hotel; other languages including Arabic, Italian, French or Spanish are highly desirable.

Responsibilities

• Ensure beverage standards in all areas are exceptional and aligned with Dorchester Collection values.
• Train, coach, and mentor the bar team; model operational excellence.
• Drive the quality of the beverage program; share deep product knowledge with teams and guests.
• Design innovative, seasonally inspired cocktail programs that reflect global trends and reinforce the hotel's brand.
• Collaborate with the culinary team to develop sophisticated F&B pairings for events and VIP guests.
• Establish relationships with premium vendors for exclusive spirits and sustainable ingredients.
• Manage inventory, minimize waste, and maintain portion standards for profitability.
• Oversee health, safety, hygiene and local liquor licensing compliance across bar operations.
• Ensure bar tools and equipment are maintained and operating at peak efficiency.
• Share knowledge with teams and guests to elevate beverage offerings.
