Job summary

Dorchester Collection's Beach Club in Dubai is seeking a Head Mixologist to lead our beach-side cocktail program. You will join a dedicated team, report to Beach Club Management, and drive guest-centric service and beverage excellence.

You will train staff, develop recipes, ensure hygiene and cost control, and stay ahead of global trends while delivering the highest standards of craft and hospitality in our luxury hotels.

Qualifications

• University degree in Hospitality Management or equivalent experience.
• Minimum 2 years in a similar position in luxury hotels/restaurants in the Middle East.
• Fluency in English; other languages desirable.
• Experience in World's 50-Best cocktail bar or recognition in cocktail competitions desirable.

Responsibilities

• Join a dedicated beach team reporting to Beach Club Management.
• Ensure optimal bar operations to deliver an immaculate guest experience.
• Maintain beverage preparation, presentation, and cleanliness standards.
• Train and develop the bar team to ensure quality and consistency.
• Manage stock, wastage, and cost control.

What you’ll do

• You will be joining a dedicated beach team and will report directly to the Beach Club Management team.
• Work under the direction of Restaurant General Manager ensuring optimal bar operations to deliver an immaculate guest experience.
• You are aware of the latest trends and continuously innovate to ensure our offering remains at the very top of what is being offered around the world.
• Maintain quality standards with regards to beverage preparation presentation service and cleanliness of the bar.
• Ensure all Mixologists and other team members adhere to the service standards and standards of presentation of beverages
• Our values of Passion Personality Respect Working Together and Creativity guide us each and every day. As a Head Mixologist youll have the opportunity to bring these to life and continue to create our legacy.
• By taking part in a daily team briefing pre-service you ensure you are well informed of the daily happenings around the hotel and the residence as well as the upcoming service.
• Liaise with all departments with to ensure high standards of cleanliness and maintenance are maintained in all areas of the bar such as equipment furniture floors fixtures and fittings to ensure an immaculate guest impression.
• Responsible for training and development of the bar team to ensure beverage presentation and preparation is maintained
• Minimize cost by reducing breakage loss misuse of equipment and correct managing of the opened bottles of wines and spirits to avoid spoilage.
• Responsible for stock control requisition accurate stock taking and planning consumption accurately to ensure wastage of ingredients is kept to a minimum
• Assist in maintaining administrative records such as attendance records hygiene inspection records etc.
• Develop recipes and ensure consistency in delivery with regards to the cocktail program of the entire operation in conjunction with the management.
• Ensure quality levels of all products and services are maintained as well as costs sanitation cleanliness and hygiene are controlled on an ongoing basis.
• Ensure that all Food and Beverage Hygiene and Sanitation Standards are attained in accordance with the local municipality regulations
• Along with your main duties you may be asked to complete other tasks as and when necessary and reasonably required.
• You may on occasion be required to adjust your hours of work to cover the beach club needs.
• You acknowledge that working in beach club operations involves exposure to heat and sun operating under pressure and requires standing and walking for long periods of time.

• You will have a University Degree in Hospitality Management or equivalent experience Minimum 2 years in similar position and bring a wealth of past experience working for luxury hotels and restaurants in the Middle East.
