Job summary

The Lana, Dorchester Collection Dubai seeks an experienced Mixologist to lead daily bar operations, craft standout cocktails, and elevate guest experiences in a luxury setting.

You will train the restaurant team on beverages, stay ahead of trends, and help meet revenue targets while maintaining cost controls. Excellent communication and fluency in English are essential, with additional languages a plus.

Qualifications

• Professional mixology skills and knowledge of beverage trends.
• Experience in luxury hotels/restaurants in the Middle East.
• English fluency; Arabic/Italian/French/Spanish desirable.

Responsibilities

• Oversee day-to-day bar operations to deliver top guest experiences.
• Create and maintain beverage menus and cocktails.
• Train and mentor restaurant team on cocktails.
• Monitor trends and innovate offerings to stay top.
• Achieve revenue targets while controlling costs.

What you'll do

You’ll love what you do and take pride in delighting our guests:

• You will be responsible for the day-to-day operations of the bar to ensure our guests receive nothing but the best experience.
• Cocktails are your passion, you will assist with creating and maintaining the beverage menus our hotel will offer, exceeding our guests' expectations every time.
• You will also be in charge of training and mentoring the entire restaurant team with a focus on cocktails, ensuring their knowledge is second to none and they are able to assist our guests in the best possible way.
• You are aware of the latest trends and continuously innovate to ensure our offering remains at the very top of what is being offered around the world.

• You are aware of revenue targets and ensuring these are achieved and exceeded, simultaneously all costs are controlled within pre-set budgets including beverage cost and other expenses.
• By taking part in a daily team briefing pre-service, you ensure you are well informed of the daily happenings around the hotel as well as the upcoming service.
• During your daily routine, you liaise with other departments when required to ensure an immaculate presentation of your outlet and high standards of cleanliness as well as maintenance are upheld at all times including restaurant furniture, equipment, floors, fixtures and fittings.
• In collaboration with your service team, you ensure fantastic quality of beverage preparation, presentation and beverage inventory control.

• You are passionate about our industry and are aware of all the latest F&B trends and developments around the world.
• English is the primary language used in our hotel. You can comfortably communicate in this language. Other languages including Arabic, Italian, French or Spanish are highly desirable.
• You will have a relevant professional certification or hotel school diploma and bring a wealth of past experience working for luxury hotels and restaurants in the Middle East.
• Experience in a Worlds 50-Best cocktail bar or accolades from a recognized Cocktail Competition are highly desirable.
